Creating the Essential Vegetable Salad: A Must-Have Classic for Every Dinner

**Ingredients:**


- 2 cucumbers

- 5 cherry tomatoes

- 1 green onion

- 1 red pepper

- 5 large lettuce leaves (optional but highly recommended)

- 1/4 purple cabbage (optional but highly recommended)


**Sauce Ingredients:**


- 8-9 coriander leaves (optional)

- Juice from half a lemon

- 1/4 cup of olive oil (3 tablespoons / 45 ml)

- Pinch of salt

- Pinch of pepper

*Quantities can be doubled.


**Instructions:**


1. Cube the cucumbers, cherry tomatoes, red pepper, and green onion. Place them in a bowl.

2. If using, slice the lettuce leaves into thin strips and add them to the bowl.

3. If using, finely shred the purple cabbage and add it to the bowl.

4. In a separate container, mix the olive oil and lemon juice together. Drizzle this mixture over the salad and toss well to combine.

5. If using, finely chop the coriander leaves and sprinkle them over the vegetables.

6. Season the salad with a pinch of salt and pepper according to your taste.

7. Give the salad a thorough mix to ensure all ingredients are well coated with the dressing.
